To grow a highly productive, low input crop on marginal land to yield new, healthy food products with a low GI, and to produce GF flour. To do this we are developing new agricultural machinery and a new processing (extraction) technology. This technology can be used to process waste vegetables. Up to 50% of "ordinary" crops and 85% of squash crops are rejected by the market and have to be used for low value products and not used for human consumption. Or they are dumped in spite of being perfectly good and healthy. We aim to change this so improving national productivity, increasing food supply improving farmer returns. We also aim to produce a natural sweetener to replace cane sugar thus helping stem (we hope) the international diabetes epidemic that is such a threat.
